Description
It is the largest and longest-lived sturgeon, has the largest eggs that vary from pale to dark grey and yield grey oil. The larger and paler the eggs, the more highly they are prized. This is the most valued caviar. This sort has very large grains 3-4 mm in diameter with a very thin membrane, therefore they burst easily in the mouth releasing a long finish with slightly buttery notes with the rich and varied flavors.
